Only some jets have gone that fast. Most people could not handle that.
Just because they can launch up to 700mph, doesn't mean they will - I don't doubt that if people wanted to, they could build rollercoasters as tall, or taller, than the tallest skyscrapers in the world, but they don't, because 300ft is plenty to give the sensation of being out of control without costing too much.
I guess if you could quantify 'thrill' and plot a graph of thrill against size of coaster (keeping the quality of all other aspects of the design the same) it would form a sort of hyperbola (1/x) graph, where change in height makes a big difference to the amount of thrill for a while, but then after you reach about 200ft, people wouldn't notice it so much. A rather silly analogy (and possibly quite a boring one too, for non mathsy people) but that's how I think.
