Smoothest; Sheikra or Cheetah Hunt.
Both are unbelievably smooth coasters. Cheetah Hunt probably tops it, but, yeah. They're both smooth.

Roughest; Stampida (post Kumbak), Magnus Colossus, Gwazi are all high up there.
Stampida used to be incredible. Not that rough and extremely forceful. Now, it's a pile of ****.
Magnus Colossus is just rough and I wouldn't bother to ride if I went to Terra Mitica again.
Gwazi is a fun kind of rough, but there's no two ways around it. It's ROUGH.

Roughest: SAW - The Ride @ Thorpe Park

Roughest wood: Grand National

Smoothest steel: OzIris (yet another B+M in it's first year)
Roughest steel: Euro Mir

Smoothest Steel: Apollo's Chariot (BUTTER!)

Roughest Wood: Mean Streak
Roughest Steel: Viper @ Great Adventure or Corkscrew @ Cedar Point

Roughest Steel: The Ultimate
Smoothest Steel: Probably Silver Star

Roughest Wood: Cyclone in America (any of them :p )
Smoothest wood that has the slightest forces: Balder
Smoothest wood because it's dull and does nothing: Wodan

I think it's worth making the distinction between a ride that makes an effort and one that doesn't. It's easy to be smooth if you're boring.

Smoothest: Air, Manta, Tatsu, Blue Fire (All butter smooth)
Roughest: All Mack bobsleighs, Saw, Speed: No Limits, Gouderix, Limit

Wood:

Smoothest: Balder
Roughest: Stampida, Wildcat, LC, Grand National (Only back row for Nash)

Roughest: Hurricane at the Myrtle Beach Pavilion (Torn down now, thankfully. I suspect to this very day i broke something in my neck)

Smoothest steel is MF. Roughest is GASM at Great Adventure.
The smoothest "woodie" is El Toro, but besides that it's Lightning Racer.
The roughest is Predator at Darien.

Smoothest: El Toro in the front seat.

Roughest: Cyclone (SFNE) in the back

Smoothest I've ridden is probably X-Flight and Wild Eagle. I'd expect a similar feel from Gatekeeper as well.

Roughest I would say is Avalanche, now HellCat at Timber Falls in WI Dells. I had bruises after riding that about 11 times in 2 hours.

Smoothest has got to be Silver Bullet at KBF.

Roughest by far was Psyclone at SFMM.

Does anyone remember Rock 'N' Roller Coaster at Hollywood Studios being really rough? Because I thought it was really rough when I went in 2011. Still a fun ride though.

^I think the first part was good but the second part was when the corkscrew ripped my neck off and the turns beat me to death.
